- Temperature Control: No concerns noted this date. Temperature audits are being conducted and recorded. Records were reviewed.
- Manual Dishwashing: 4 Step Method (Quat) - No concerns.
- Ensure all food contact surfaces are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours) Utensils/implements are to be stored in a sanitary manner. (ie: Knives are not to be stored in between equipment.)
-> Wiping cloth storage: Ok.
- Use 200 ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Damaged/cracked storage containers are not to be used. Replace.
- Chemical storage: Ok.
- Sanitary Facilities: Ok.
- Staff illness/hygiene: Discussed.
- Sanitation: No concerns.
- Garbage/Recycling/Composting Storage: All items are to be kept stored in covered, rodent proof containers. Area is to be kept clean and organized. Grease bin cleaning/disposal discussed.
- Pest Control: Monitoring is to be conducted. No signs noted this date.
- FoodSafe Trained staff are to be on site at all times.
- Food Safety Plan and Sanitation Plan are on site. Corporate policies and procedures are to be followed. Staff are to be trained according to these procedures.
