Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: No surface sanitizer noted, wiping rags were on counter
Correction: Wiping cloths must be stored in proper sanitizer bucket during operation. Provide a bucket of sanitizer beside each food prep area

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: -No designated hand washing in kitchen ( prerp area ) , staff confirmed they are washing hands in washroom
-Hand washing sink in cooking area was occupied with utensils at time of visit
Tickets will be on hold
Correction: - There must be a designated hand washing sink in back- there are two two compartment sink, on of the two compartment dishwashing sink can be used as a designated hand washing sink- provide paper towel and liquid soap wall mounted at this sink
-Hand washing sink must be accessible for hand washing at all time and no other thing- provide splash guard for both side of this sink- it is too close to foods prep area
Comments

- Most issues are addressed with the exception of :

- Dishwasher ( Dual) not reaching proper temp of minimum 71 oC at plate or 50 ppm chorine - checked more then 5 times, operator changed the rinse aid and primed the unit
- hand washing sink in cooking area : hot water tap is turned off due to leak- fix it
-Ventilation hood is scheduled to be cleaned on Saturday

The following are also discussed with the operator to be done gradually:

1.Broken tiles and cemented floor in the back area to be fixed
2.Wall to be repired
3.No food storage for up storage area due to improper stair and no staircase ( worker injury and not accessible for inspection)
4.Maintaining proper sanitation at all time
5.change large tub to smaller ones so they can be either fit in the sink for manual washing/sanitizing or inside dishwasher

Have an action plan with time line for the 5 item by tomorrow.

Conditional opening for tonight - all dishware to be manually sanitized ( previous dishware are done) - due to the volume of dishware and utensils this temporary solution is not practical so dishwasher must be fixed by max tomorrow in addition to hand washing sink in prep area.

Violation ticket will be on hold.
