Observation: 20+ flies noted on the wall by the 2-compartment sink, electrical panel and front handwash station area. As per Manager, pest control company had came in last month for an inspection.
Corrective Action(s): Ensure all food, including chips, hot hold units and any food out in the open are protected with a temporary lid/ cling wrap or cover to protect them from flies landing on the food. Flies are known to be carrier of diseases and can transfer diseases to food if landed on them.
Any equipment that is not protected (e.g. cutting board, knives, measuring cups) must be washed and sanitized prior to use in case the flies have landed on them prior to use.
Contact your pest control company again to have them address the increase fly activities. Continue keeping these areas clean to remove any potential food sources for the flies.

Observation: Grease and carbon buildup noted on the grill of the baffles along the fume hood and below the grill top.
Corrective Action(s): Clean and sanitize the abovementioned areas.
It's extremely important to clean and sanitize this area often to prevent carbon and grease buildup as this may potentially lead to a fire hazard.

Routine inspection conducted today:
Handwash stations, including washroom, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were holding food at 4.0C or below.
All freezer units were holding food at -18.0C or below.
Hot hold units and rice cooker were all holding food over 60.0C.
General storage hierarchy is good.
Bleach sanitizer spray bottle available. 200 PPM chlorine residual detected.
High temperature dish machine able to reach 71.4C at the plate level during the rinse cycle.
Interior of the ice machine noted in a sanitary condition. Ice scoop stored with handle extending from the ice and not in contact with the ice - good.
