Hand sink by 3 compartment sink partially obstructed with large pot. Reminder to not store any equipment in front on this hand sink.
100ppm bleach sanitizer solution available for use in kitchen. Bleach sanitizer solution for use in the front area well over 200ppm on concentration. Dilute bleach to 100ppm by diluting 1 oz of regular unscented bleach to 1 gallon of water.
3 compartment sink setup for manual warewashing. Reminder to wash, rinse, sanitize, then air dry all dishes/utensils.
Scoops stored outside of dry products.
Samosas hot held in pizza hot holding case above 60 degrees C. Ensure samosas and pizza are hot held at or above 60 degrees C.
