Observation (CORRECTED DURING INSPECTION): Hot-held soup and peanut sauce were both measured to be at 50C.
Corrective Action(s): Staff stated soup and peanut sauce were hot-held for about an hour. Staff reheated soup and peanut sauce to boiling temperature and placed in hot-holding unit.
Ensure all food items to be hot-held are first heated to at least 74C (or 100C if liquid), then placed in a preheated hot-holding unit at 60C or hotter.

Observation (CORRECTED DURING INSPECTION): No sanitizer solution was readily available in the back prep area.
Corrective Action(s): Staff filled a sanitizer pail with 200 ppm Quat sanitizer at time of inspection. Ensure food-contact surface sanitizer solution is readily available for use (in a spray bottle or in designated sanitizer pails) in all food prep areas (front and back kitchen).

Observation (CORRECTED DURING INSPECTION): Scoops for cold toppings were stored such that handles were in contact with the food items.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quat sanitizer solution was available at 200 ppm from the dispenser and in a sanitizer pail at the front prep line.
- Solution in sanitizer pails is changed every 2 hours - good. Scoops for hot-held rice and quinoa also changed every 2 hours.
- Three-compartment sink available for manual warewashing. Sink drain plugs available for use and sinks were maintained in sanitary conditions.
- Designated food prep sink maintained in sanitary condition.
- Walk-in cooler measured at 2C. Topping prep cooler and all undercounter coolers were measured at 4C or colder. Reach-in cooler measured at 4C. Accurate thermometers available.
- Hot-held food items were measured at 60C or hotter, with the exception of the soup and the peanut sauce (see violation code 206 above).
- Food storage practices were satisfactory. All food stored off the floor and properly covered.
- All equipment maintained in sanitary conditions.
- General sanitation excellent
- No signs of pest activity noted at time of inspection. Pest control is in place.
