Observation (CORRECTED DURING INSPECTION): Employee cell phone was placed on a work table, where an employee was handling food.
Corrective Action(s): Personal items such as cell phones must be stored in a designated area. Items such as cell phones can result in direct contamination or cross contamination of work surfaces. Review with all staff proper storage of cell phones. Cell phone was placed in the designated holder and work area was sanitized at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Potato press, knife, and vegetable peeler were found to have old food debris. Wicker basket (single use lining on top) was found to be visibly soiled with food debris.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized after each use. Wick baskets which have a single use liner still need to be washed and sanitized nightly. Equipment and utensils were washed and sanitized at the time of inspection.

Observation: Exhaust hood canopy vent covers were covered in dust.
Corrective Action(s): Vent covers must be cleaned on a regular basis to prevent attraction of pests and potential fire hazard (cleaning must be carried out in addition to routine professional exhaust canopy cleaning).

Observation: Walk-in cooler ranged from 5C to 6C (cooler unit digital thermometer registered 46F to 47F, with a setting at 38F)
Corrective Action(s): Service or adjust cooler unit and ensure it can maintain temperatures at or below 4C/40F. Service technician has neem contacted to adjust cooler unit.

Comments

-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 4C.
-Under counter freezer was at -13C.
-Chest freezers (One in kitchen, two in front, and two in back storage) ranged from -13C to -32C.
-Hot potentially hazardous foods cooled using an ice wand.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail labelled and tested at 100ppm to 200ppm.
-Foods stored off the floor and covered.
-No signs of pests noted at the time of inspection.
-Manager FOODSAFE Level 1 valid until October 03, 2022. Operator FOODSAFE Level 1 valid until May 29, 2023.
