Observations:
- Walk-in cooler at 2'C
- Walk-in freezer at -19'C
- Sandwich and preparation line coolers (drawers and inserts) at or below 4'C
- Hot-holding units measured above 60'C
- General sanitation of premise is good during inspection
- Hand washing stations are observed unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Chemical dishwasher measured at 100 ppm chlorine concentration with test strip
- QUATs sanitizer in pails (X4) and bottles (X1) measured at 200 ppm QUATs concentration with test strip
- Iodine glasswasher measured at 12.5 ppm iodine solution
- Ice machine observed in sanitary condition with scoop placed outside the machine
- Equipment observed stored in sanitary manner
- All food observed stored at least 6 inches off the floor
- All food observed covered
- First-in-first-out method is in use (time stamps available on food containers)
- Raw meat observed stored away from ready-to-eat foods
- Cooling log maintained for cooked food items
- Probe thermometer available in food preparation area
