Routine inspection: -handsink fully equipped -one bleach water bucket at 200ppm chlorine for sanitizing and another was made up by staff at time of inspection checked at 200ppm chlorine as well -high temperature dishwasher at 71C at dish level -freezers at -18C or less -all kitchen staff have food safety training -no signs of pests ***both coolers in kitchen at 5C but groceries were just placed in unit after a shop, ensure unit comes down to 4C within two hours ***temperature logs in use for coolers but one has not beedn started for the month of June; staff informed that night shift records temperatures each morning; temperatures of coolers should be recorded once in the AM and once in the PM; temperature log template left on site ***staff informed that digital temperature display on dishwasher is visually monitored when in use; dishwashing wash and rinse temperatures should be recorded at least once a day; temperature log template left on site
