All rodent droppings have been cleaned up. General sanitation of premise has improved. Storage of foods in the back area has improved - operator has obtained large plastic bins with lids for ingredients, and food is stored off of the floor. Wiping cloth is kept in the bleach sanitizer. Undamaged side of cutting board is in use at preparation cooler. Discussed with operator about the proper way to set up snap traps (i.e. set perpendicular to a wall or large object) to ensure they are more effective at monitoring/catching rodents.
