Observation: Accumulation of dust and grease observed on ventilation exhaust filters above the oven in the kitchen. This might create fire hazards also falling dust and debris into the food.
Corrective Action(s): Clean exhaust filters so sthat they are free of grease and dust.
Note: Operator stated that cleaning is scheduled for this week.

Chest freezer is @ -22C - good
Fridge with inserts is @ 3.6C - good
Upright fridge in kitchen is @ 16C
Under the counter freezer @-18C
Sanitizer bottles provided (chlorine at 200 ppm)
Garbage area is maintained clean and bins have lids on.
No sign of pest observed at this date.
Hand washing stations are provided with hot/cold running water, liquid soap and paper towels.
Dish washing machine is well maintained. DW machine water temp reaches 71C at the rinse cycle.
Permit is posted.
Covid-19 Safety Plan is in place. Signs noted. Hand sanitizers provided.
