Observation (CORRECTED DURING INSPECTION): No approved food-grade sanitizer was available at the facility during the inspection. This is evident that the facility is not properly practicing manual warewashing procedures as per their Sanitation Plan.
Corrective Action(s): Purchase an approved food-grade sanitizer and follow the proper procedures for using the 3-compartment sink for manual warewashing. All dishwares in the facility are to be rewashed and sanitized.
Whenever the facility is preparing and serving food, they must prepare a sanitizer solution to use on food contact surfaces as required.
**Issue corrected at the time of inspection** Operator purchased bleach before the end of inspection. A sanitizer container was created (2 tsp bleach per 1 L water) for the facility. 200 PPM chlorine residual was detected.

Observation (CORRECTED DURING INSPECTION): - Handwash station in the cooking area was not in-use as per the staff working at the kitchen at the time of inspection. This was the only handwash station available in the cooking area. No soap and paper towel was available at the dispensers.
- Paper towel not loaded into the dispenser in the staff washroom.
Corrective Action(s): **Issues corrected at the time of inspection**
- Handwash stations were restocked during the inspection. Please ensure that all handwash stations that were initially approved must be accessible, equipped with hot and cold running water, liquid soap and paper towel. Food handlers must use the handwash station as required when handling and preparing food.

Observation: Raw fish and raw eggs noted stored on top of sauces and vegetables.
Corrective Action(s): Store the raw fish and raw eggs on a lower shelf or away from the sauces and vegetables. Ensure all food in storage must be stored in the proper storage hierachy to avoid potential cross-contamination.

Observation: 1. Organic buildup noted on the shelves in the walk-in cooler.
2. Dust buildup noted on the ceiling by the fan unit in the walk-in cooler.
3. Excessive grease buildup noted on the floor and wall along the cookline.
4. Dried on food soil noted on the faucet handles of the handwash station.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

Corrective Action(s): Transfer all food that is being stored in non-food grade containers into proper food grade containers that can withstand constant cleaning and sanitizing. Chemicals may also leach out of these containers and potentially contaminate food.

Observation: 1. Cardboard being used as liners for the microwave and below the wok in the cookline.
2. One of the cutting boards at the facility was noted with deep scratches and severe stains.
Corrective Action(s): 1. Remove all cardboard being used as liners. All surfaces on the premises must be non-absorbent, smooth and easy to clean.
