Observation: 1. Interior and gaskets of the reach-in cooler in front area and reach-in cooler in kitchen by fryers observed with long-standing debris.
2. Long-standing debris observed on floors under stand-up fridges in prep area and cooking equipment.
Corrective Action(s): 1. Clean the interior of the reach-in coolers to maintain the equipment in sanitary condition.
2. Clean and remove the long-standing debris on floors in the kitchen area to prevent the attraction of pests.

- Dishwasher not in use during this time with dining area closed
