Observation (CORRECTED DURING INSPECTION): Thai sauce and another sauce labelled "keep refrigerated" were open and kept at room temperature on the counter. Staff discarded the sauces.

Observation: In-use utensils (e.g. tongs, scoops for sauces, etc.) are washed and sanitized at the end of every day. This is not frequently enough. In-use utensils must be washed and sanitized a minimum of every 4 hours. [Date to be corrected by: immediately]

Observation: Paper towel dispenser at staff cash counter handsink was not stocked with paper towel. Alternative means of drying hands was available. Handsink next to 3-compartment sink was blocked by equipment and therefore not accessible. [Date to be corrected by: immediately]

Observation: Cooler/freezer temperature log has not been filled out consistently. No temperatures recorded for the month of December. Recording temperatures allows the operator to know when equipment failure has occurred and the safety of the food inside is compromised. Coolers must not rise about 4C. Facility has been understaffed for ~couple months, but has a plan in-place to bring in more employees and complete the cleaning
Plastic cover for hotdog hotholding unit has ripped. Operator has already ordered a new screen
Quats sanitizer at pot sink and spray bottles at 400 ppm
Hotholding at >/= 60C
Coolers operating at </= 4C
Freezers operating at </= -18C
UV fly lights in-operation; no signs of pests observed
