Bleach sanitizer available at 100 ppm. Observed wiping butcher blocks with sanitizer.
All coolers operating at </= 4C
All freezers operating at </= -18C
All hot-holding units operating at >/= 60C
Foods are cooked (e.g. deep fried pork cutlet, chicken cutlet) then placed on shallow metal trays on racks for less than 2 hours before putting into the cooler. Cooling: 60C to 20C in 2 hours and 20C to 4C in 4 hours (6 hours cooling time total). All potentially hazardous foods must not remain at room temperature for longer than 2 hours.
High-temperature dishwasher reached >71C at the plate level upon final rinse cycle
Ice machine is maintained in sanitary condition. Free of rust and mould. Scoop stored separately.
General sanitation is satisfactory.
No signs of pests observed. Back door is screened.
