Observation (CORRECTED DURING INSPECTION): Sanitizer Buckets are either empty or lack of proper solution. Operator refilled and refreshed the buckets with QUAT sanitizer at the time of inspection. Sanitizer measured at 200-400 ppm. Wiping clothes are to be stored in the sanitizer solution.

Observation (CORRECTED DURING INSPECTION): It was observed that hand washing sinks are obstructed with garbage cans or empty boxes. Operator removed the big garbage cans and boxes.
Corrective Action(s): Ensure that access to hand sink is easily possible. Do not obstruct the hand sinks to encourage staff hand washing.

Comments

Routine inspection
- Hand washing sinks are equipped with hot/cold running water, liquid soap and paper towels.
- Under the counter coolers are at or below 4C
- Upright coolers are at or below 4C
- Deli Walk in cooler, at the back, is at or below 4C. Organize the cooler so that there is no food boxes stored on the ground.
- Temperature monitoring log maintained.
- Hot holding units are at or above 60C
- Dish washer registered 50-100 ppm chlorine at the dish surface.
- Dishware washing sinks are maintained.
- No obvious sign of pest at this date.

Important Reminders:
1- In cooling process of food, Ensure to divide the food to small portions in order to cool faster. Utilize the walk-in cooler and Ice Wands to cool the food properly and in time. (From 60C to 20C within 2 hours and from 20C to 4C or below within 4 hours.). Please Follow your Food safety Plan.
2- Increase the frequency of cleaning and sanitixing high touch surfaces. Fridge door handles must be wipe down regularly to be maintained free of heavy soil and grease.
3 Clean hard to reach areas and under the equipment and ensure food in the kitchen stored above the floor.
