Observation (CORRECTED DURING INSPECTION): Few spatulas were worn out and disintegrating from the sides.
Corrective Action(s): Ensure that all the equipment/utensils are maintained in good working order. Discard the worn out spatula as they can not be adequately cleaned & sanitized and could potentially result in bacterial growth on them.
Staff discarded the spatulas at the time of inspection.

Comments

Routine inspection conducted at the facility's kitchen and the following observations were made:

Temperature:
- Walk-in cooler at 2C
- Walk-in freezer at -18C
- Stand-up cooler at 4C
- Fridge in common room at 2C
- Temperature logs were maintained and found up to date
Ensure that the temperature gauge are calibrated and display accurate temperature reading.

Storage:
- Food was stored in pest proof food grade containers.
- Food items were either prepackaged or properly covered.
- All the food products were stored 6" off the floor.
- Adequate shelving was provided in dry storage area as well as in walk in cooler/freezer.

Sanitation & Maintenance:
- Hot temp mechanical dishwasher was in place. The temperature at dish surface was recorded at 73.6C.
- 3 compartment sink available for dishwashing with sanitizer dispenser. The concentration of QUATS noted at 200ppm.
- QUATS sanitizer pails observed in the kitchen.
- All handwash stations had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Equipments, utensils and pans maintained in good sanitary condition.
- No build up of grease or dirt observed on vents. Last services completed in October 2021.

Pest Management:
- No sign of pest activity observed at the time of inspection.
- Mechanical traps were put in place.
- Certified pest control company conducts routine checks.

Administrative:
- A valid Operating Permit was posted in the kitchen area.
