Observation:
Accumulated dust on the upper walls and ceiling of the premises. The dust could fall into food and contaminate it.
Corrective Action(s):
Wash the upper walls and ceilings to remove the dust. Add the cleaning of these areas to the cleaning schedule, so it is done routinely to prevent the accumulation of dust.

Comments

A routine inspection was completed:
- Walk-in-cooler 2C; u/c line-coolers 4C; upright drink coolers 4C; assembly cooler 4C; retail reach in cooler 4C; walk-in-freezer -22C, novelty ice cream freezer -23C; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 76.7C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle had strength of 200ppm.
- Food stored in food grade containers; covered; labelled; date coded; foods stored in groups with proteins below RTE foods; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good and being maintained. Keep it up.
- Exhaust canopy and filters are clean, staff are cleaning them between professional service.
- Next professional cleaning and service of the exhaust canopy and filters is in April 2025. Ensure this is completed.
- No signs of pests.
- Valid, FoodSafe certified staff present or they possess a recognized equivalent certificate.
- Valid health permit and decal posted.
- New aluminum foil observed lining drip trays under the gas range. Staff are changing the foil daily. Good.
- Damaged walls have been repaired and painted, and stainless steel panels installed in some areas. All surfaces are smooth, level, sealed, and cleanable.

ACTION
Clean the upper walls and ceiling to remove the accumulated dust. This shall be done on a regular basis to prevent dust from gathering and falling into food.
