Hand wash stations were fully equipped with soap, paper towel, hot and cold running water (washroom, designated hand sink, three compartment warewashing sink).
All coolers 4C or less (walk in, prep...etc)
Freezer -18C
Premises does not do any hot holding. Time tracking available for each pizza as per corporate food safety plans. All other foods are made per order. Note: All meats are precooked.
Probe thermometer available on site to check internal temperature of foods. Ensure probe is sanitized between uses.
Good general sanitation. No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
Quat sanitizer in spray bottle and at dispensers x2 200ppm quat. Staff appear to be using single use paper towel to wipe.
Manual ware washing procedures reviewed at time of inspection – no concerns. Drain plugs available. Test strips available to verify sanitizer concentration.
Pans sent for warewashing to commissary at head office location once every 6 months.
All metal pans (put in oven) and all black pans (that the dough comes in) appear to be in good condition (ie. not broken or worn away)
All stored foods appeared protected (ie. stored off the ground, covered light covers in place..etc)
