Observation (CORRECTED DURING INSPECTION): Knives are being stored in a "crevice" between equipment.
Corrective Action(s): Knives were run through the high-temperature dishwasher at time of inspection. Do not store knives in a crevice. Store knives in a designated drawer or knife holder that can be disassembled, cleaned, and sanitized. The crevice is not an appropriate location for storing knives.

Observation (CORRECTED DURING INSPECTION): Two bags of flour were left opened. Mouse droppings identified in the vicinity.
Corrective Action(s): Bags of flour were placed in pest-proof containers. DO NOT leave bags of flour out in the open - not only is it subject to contamination, but also attracts pests / rodents.

Observation (CORRECTED DURING INSPECTION): Mouse droppings observed in corner of facility underneath the dry storage shelving.
Corrective Action(s): Mouse droppings were removed at time of inspection. Use 1 part bleach, 9 parts water to remove the droppings. Follow-up with a professional pest control company to set up mechanical traps and monitor for signs of rodent activity. Ensure that the area is kept in good sanitary condition, and that all dry storage goods are stored inside pest-proof containers with tight-fitted lids.

Comments

Routine inspection conducted for commissary kitchen located at Price Pro (upstairs). The commissary prepares food for the snack bar, which hot-holds the products. The area is generally well maintained and is in good sanitary condition.

1. Temperatures
- Stand-up double-door cooler at 4C
- Stand-up double-door freezer at -18C
- Prep cooler at 4C
- Coolers stocked with accurate thermometers

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at a final rinse cycle of 72C at the plate (Minimum requirement: 71C)
- QUATS spray bottle tested at 200 ppm
- Ventilation canopy generally well maintained

3. Storage
- Raw items stored underneath cooked and ready-to-eat products
- Shelving is well maintained and in good sanitary condition. Cleaned pots and pans are stored on wall-mounted shelves

4. Pest Control
- Pest control measures will need improvement (see violation code above)

5. Administrative
- Chef on-site has BASICS.fst (last verified on Sep 7, 2018). BASICS.fst expires in 2021
