Observation (CORRECTED DURING INSPECTION): Handwash station did not have single use paper towels. Dispenser was empty.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Paper towel dispenser was refilled at the time of inspection

Comments

-Sushi cooler was at 4C.
-Prep cooler was at 4C.
-Front display cooler was at 4C.
-Walk-in freezer was at -18C.
-Rice had a pH of 4.0.
-Temperatures and rice pH checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 74C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer dispenser was at 200ppm.
-Quats sanitizer pail was tested at 200ppm.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination,
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection
-FOODSAFE Level 1 valid until March 24, 2023.
