-Sushi cooler was at 3C.
-Display cooler was at 4C.
-Under counter cooler was at 4C.
-Customer area coolers were at 4C.
-Upright freezer was at -14C.
-Hot holding foods are time tracked and discarded every 4 hours.
-Chicken wings were cooked to greater than 74C.
-Temperatures are checked and recorded daily.
-Sushi rice had a pH of 4.0
-Cleaning and sanitizing carried out in the 3 compartment sink. Quats sanitizer was tested at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Deli slicer disassembled for cleaning and sanitizing every 4 hours.
-General food storage practices good at the time of inspection.
-Raw foods stored separately from ready-to eat foods.
