Handwashing sink provided with liquid soap and paper towel Coolers: 4C Freezers: -18C Hot holding: 60C Bleach solution in spray bottle at 200ppm chlorine concentration Dishwasher: >71C for final rinse at plate surface Valid Foodsafe Level 1 Certified staff on shift. Note: New addition has been added to the kitchen, but not in operation yet. Please provide updated floor plan for health department. Recommendation: add at least a 2 compartment sink for manual dishwashing along with handsink already installed. Operator to also ensure floor is smooth, non-absorbent, cleanable surface - currently concrete has cracks in it. New addition cannot be in operation until written health approval is granted - contact health department to schedule appointment.
