Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not properly washed and sanitized. Violation Score: 5
1. Observed wet stacking of cake pans and other containers on the storage rack next to the 3 compartment sink.
2. Observed vinegar and after in spray bottles, operator stated that it is used for sanitizing food contact surfaces.
Health Rationale:
1. Equipment not properly air dried after washing and sanitizing increases the risk of re-contamination due to environmentals and physicals, such as dust and dirt. This may lead to potential injury or illness.
2. Food contact surfaces not properly sanitized increases the risk of pathogen survival, leading to potential contamination of food and potential foodborne illness.
Corrective Actions:
1. Operator was educated on proper air drying after manual ware washing. Operator has additional drying racks that can be set up at the time of inspection. Ensure equipment is properly washed/rinsed/sanitized/air dried.
2. Operator replaced vinegar and water with bleach solution between 100 - 200 ppm at the time of inspection. Ensure all food contact surfaces are properly sanitized.

Observed submerged scoops in dry goods containers.
Health Rationale:
Submerged scoops in dry goods increases the risk of staff directly touching the food when reaching in, lending to potential cross-contamination and foodborne illness.
Corrective Actions:
Operator removed scoops and placed them in a clean container after washing and sanitizing at the time of inspection.
Ensure scoops are not submerged to protect food from contamination.

Cake cooler measured at 16C - operator stated that buttercream iced cakes are placed inside (non-potentially hazardous food)
Front display cooler measured at 4C.

Sanitation:
Mechanical pest traps present throughout facility, pest control services once/month.
Front handsink, kitchen handsink and staff washroom supplied with hot/cold running water, liquid soap and paper towels.
3 compartment sink supplied with drain plugs and bleach sanitizer for manual warewashing. Operator prepared sanitizer sink, measured at 200ppm chlorine.
Grease interceptor is serviced once/yr.
All food is off the floor and in proper pest-proof containers or coverings
No pest activity found at the time of inspection.

General:
Health permit posted in conspicuous location.
Staff has valid FoodSafe Level 1 (exp Jan.19, 2028).
