- Commissary prepares grab 'n' go foods (ie. salads, sandwiches ...etc) with ingredients from other departments (ie. deli) - All coolers 4C or less (prep cooler, undercounter cooler, cabinet drawer). - Refrigerated room approx 14C (no raw meat processing done in this area) - Hand wash station fully equipped with soap, paper towel, hot and cold running water - 200ppm quat available at at 3 compartment sink source and in spray bottle. - Staff wear gloves, clean uniform and hair restraints - Overall general sanitation good. No obvious signs of pest infestation.
