- No sanitizer available at front of house.
- Sanitizer for back of house had too much chlorine. Test strips unable to provide reading for concentration; > 200ppm.
- Sanitizer solution for manual warewashing not available.
- 2 plugs available for manual warewashing.
* Corrective actions: - Ensure 100 - 200ppm chlorine solution is available in a labelled bottle at front of house with clean wiping cloths.
- Ensure all staff are trained on proper sanitizer preparation.
- Sanitizer solution for manual warewashing must be made fresh daily.
- Enusure 3 plugs are available to fill compartments for proper manual warewashing

- Chicken meat thawing at room temperature in prep sink. Removed from frozen storage 1 hour prior to inspection.
* Corrective action: ensure foods are thawed at 4 deg.C or colder, not at room temperature. Submerged in water during inspection.

- Chicken meat thawing in prep sink, not submerged under cold running water.
* Corrective action: ensure frozen foods are thawed in cold storage overnight or under cold running water. Do not thaw at room temperature. If running water is not achievable, change the water every 4 hours. Submerged in water during inspection.

- Cardboard liners noted in walk-in cooler + on shelves

*** Correction order issued.

Items corrected since last inspection:
- Cooked noodles stored in cooler
- Meat slicer appeared clean.
- Degreaser no longer used as sanitizer, but prepared sanitizer was too strong (noted in above violation)
- Manual warewashing properly demonstrated but no sanitizer available at start of inspection (noted in above violation)
