Observation: Scoop handles in bulk flour bins are dirty or covered in food. Clean handles are required for all scoops.
Corrective Action(s): Ensure handles of scoops remain clean to prevent cross contamination. Correction required today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Fumehood cleaning servicing and cleaning is due September 2022. Grease build up observed.
2. Water build up observed on the bottom of fryer and salad bar cooler. Clean up required.
3. Knife rack next to health and safety board requires cleaning and sanitizing before clean knives are stored in this unit. Old food debrish observed.
4. Cleaning required on the fans of walk in cooler. Old dust and grease observed along the fan and compresser unit.
Corrective Action(s): Clean and sanitize above noted areas this week. Ensure old food debris and water leaks do not accumulate and contaminate food contact surfaces and utensils.

Observation: 1. Grease trap undergoing maintenance and upgrades. At the time of the inspection, contents of grease trap are contained and working. Operator states parts for repair will take about a month.
2. Hand sink next to salad and fryer station is leaking water. Repair is required.
Corrective Action(s): 1. Ensure grease trap is working and waste contents are always contained. Ensure surrounding area remain clean and free of contamination. Repair estimated to be completed in one month.
2. Repair hand washing unit so it is no longer leaking water. Correction required in two weeks.

No signs of pests at the time of inspection.

Dedicated hand sinks with liquid soap and paper towels available.

Washrooms are sanitary with fully stocked hand sinks.
Ice machine and stations are sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
2-compartment sink in use. Quat sanitizer in use at 200 ppm.
Dishwasher final rinse at 50 ppm Chlorine at the plate and washing at 62.3C.
Note: Dishwasher currently awaiting parts for upgrade and is temporary using chlorine as sanitizer instead of high temperature sanitizing cycle.

Glass washer final rinse at 12.5 ppm Iodine.
Chemical test strips and logs available.
Valid Permit posted in conspicuous location.

Holding units:
All cooler units at 4C and below. Walk in freezer at -18C and below.
Hot holding unit for soups and sauces at 61.2C.

Recommendation: Walk in freezer may require a defrost to remove excess ice build up.
Note: the yellow hydrogen 8% disinfectant solution is a stronger chemical solution and should only be reserved for use of common touch counters, door knobs and surfaces but is not intended for food contact surfaces.
Use food grade sanitizers such as 200 ppm QUATs for food surfaces like dining tables or utensils as per manufacturer's instruction.
