Observation: Final rinse on dishwasher initially too low at approx. 25ppm chlorine. Once container was changed and unit primed the final rinse was recorded at approx 70ppm chlorine.
Glasswasher not dispensing and chlorine in final rinse. Glasswasher is closed and cannot be used until repaired and is dispensing a minimum of 50ppm in final rinse.
Wiping rags observed stored on the counter. Wiping rags must always be stored in sanitizer when not in use.
Corrective Action(s): Re wash all utensils as there are no records and it is unknown when the final rinse dropped below 50ppm chlorine.
Rewash all bar glassware using the dishwasher. No records being kept for the glasswasher.
Ensure wiping rags are kept in sanitizer containers and fully submerged in quat sanitizer when not in use. This is to be changed every 2 hours.
