Observation (CORRECTED DURING INSPECTION): Vegetable cutter was found to have dried food debris from previous use.
Corrective Action(s): Ensure all equipment is properly cleaned and sanitized to prevent potential cross contamination of foods. Equipment may require additional soaking prior to cleaning and sanitizing. Vegetable cutter was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Pineapple juice was stored in an opened can.
Corrective Action(s): Ensure canned foods are transferred to food grade materials with proper covers once cans are opened. Pineapple juice was transferred to a plastic food insert at the time of inspection.

Observation: Front prep cooler was at 7C (cooler was set on level 2).
Corrective Action(s): Service cooler unit and ensure cooler is able to maintain foods at or below 4C on a consistent basis. Cooler unit was adjusted to a lower setting and still unable to maintain 4C.

Comments

-Walk-in cooler was at 4C.
-Under grill cooler was at 4C.
-Under counter cooler was at 4C.
-Upright freezer was at -18C.
-Chest freezer was at -16C.
-Prep area freezer was at -18C.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink prepared with 100ppm bleach at the time of inspection.
-Bleach sanitizing pails were at 200ppm and properly labelled.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Staff member FoodSafe Level 1 valid until March 20, 2023.
