Routine Inspection -Coolers at 4 C or below. -Temperature records maintained. -Hot holding of soup at 60C or above -Hand sink fully stocked with hot/cold running water, liquid soap and single-use towels. Reminder to keep sink free of any dishes as this is a designated hand sink. You can use one of 1/2 compartments for dirty dishes. -High temperature dishwasher reached at least 71C -Surface sanitizer in spray bottle registered 200ppm quats -Ice machine kept in a clean condition. -Stir sticks kept in ice water.
