Observation (CORRECTED DURING INSPECTION): > 200 PPM chlorine residual detected in the sanitizer container for in-use wiping cloths.
Corrective Action(s): Sanitizer solution discarded and staff was shown the proper measurements for obtaining the correct concentration (2 tsp for every 1 L water to make 100 - 200 PPM chlorine residual). 200 PPM chlorine residual detected after solution was prepared.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Frozen meats noted in large amount of water being defrosted. As per operator, water is changed every 2 hours.
Corrective Action(s): Defrosting in water is an acceptable method for thawing food. However, water must be changed every 30 minutes until the meat is defrosted.

Observation: Leaking noted from the handwash station faucet in the washroom. Note: Hot and cold running water was still available from this faucet.

Observation: Many shelvings in the walk-in cooler, display cooler and freezer units and floor in the cashier area were lined with cardboard.
Corrective Action(s): Remove all cardboard as all areas in the facility must be imprevious to moisture and easily cleanable.

Routine inspection conducted today:
Handwash stations available and accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
All equipment and food contact items noted in good condition and sanitary.
No signs of pest activities noted during the inspection.
3-compartment sink was set-up during the inspection. Sanitizer solution was prepared in the sanitize basin. 200 PPM chlorine residual detected in this basin.
No signs of damaged canned goods observed.
General sanitation and organization satisfactory.
