- Temperature Control: Monitoring is required to be conducted on site. No concerns noted this date.
- Manual Dishwashing: 4 Step Method (bleach):
- Ensure all food contact surfaces are washed and disinfected after use. (ie: Meat grinders/produce prep) All implements are to be kept stored in a sanitary manner.
- - Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Stock rotation discussed. (ie: Best before/expiry dates) Blast chiller storage discussed. Food items are not to protrude beyond the shelving supports.
- Sanitary Facilities: Ok.
- Sanitation: Facility is clean and well organized! Keep it up.
