Ensure quats sanitizer is diluted correctly. Follow the manufacture's direction. It is currently too concentrated.
Ensure that clean rags are readily accessible for staff and that it is either soaked in the sanitizer solution at all times or changed every 4hrs. The same rag should not be used on surfaces for ready to eat foods and raw meats without sanitizing in between.
Overall sanitation and maintenance of the kitchen has improved.
Ensure that the FRP walls are scrubbed to remove soils and shelves of the stainless steel prep table are cleaned.
No obvious signs of pest noted.
Cooling wands are available.
Temperature of refrigeration units are satisfactory. Thermometers are available. Manager checks temperatures with IR thermometer daily.
Handwashing station is satisfactory.
