Observation:
Found signs of mice chewing through expanding foam around the sink's waste pipe in the noodle making room. Glueboards have been placed in the premises, by a professional pest company, to monitor for activity.
Corrective Action(s):
Fill gaps around pipes by tightly stuffing steel wool into the gap and then using expanding foam to seal it. Ensure the professional pest company continues to check/monitor for pests at least once a month.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 74.6C at the plate's surface as per max/min thermometer.
- Handwashing sinks are accessible, stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had strength of 200ppm.
- Foods stored in food grade containers; covered; labelled; date coded; foods stored 6" off the floor; and foods stored in groups with raw proteins separate or below RTE foods.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has improved. Hard to reach areas and detailed cleaning are being completed.
- Valid, FoodSafe certified staff present.

ACTION
- Schedule a professional company to clean and service the exhaust canopy as the service sticker states it shall be done in February 2024.
- Block gaps around pipes to prevent mice entering into the premises. Use steel wool to tightly stuff the gaps and then put expanding foam on it. Mice do not like to chew metal or steel wool.
- Store all packages of food (bags of flour, spices, noodles, etc.) in hard plastic containers with tight fitting lids. Ensure the exterior surfaces of all food containers and lids are clean and absent of food debris. This will ensure this is not a food source for pests.
