Observation (CORRECTED DURING INSPECTION): Sanitizer unavailable at start of inspection.
**Corrected during inspection** Staff filled a red pail with sanitizer upon request. Sanitizer measured 200ppm QUATS.
Ensure that all staff understand importance of sanitizer. Fresh sanitzer should be available whenever kitchen is in operation.

Observation: Plastic scoop (with handle) observed to be stored in ingredient bin (flour). This may lead to contamination of ingredient if:
1. scoop handle falls into the ingredient, or
2. staff contaminates ingredient while reaching to pick up the scoop (e.g. contaminated hand directly touching ingredient)
Corrective Action(s): Scoop should be stored outside in a container that can be washed and sanitized. Storing a scoop outside of ingredient container also promotes washing and sanitizing of the scoop.

Observation (CORRECTED DURING INSPECTION): Mozzerella cheese observed to be at room temperature. Staff stated it was thawing for approximately 1 hour.
**Corrected during inspection** Product moved to cooler when identified.
Products can be thawed by the following processes:
1. Submerged under cold running water
2. In the cooler, or
3. In a microwave if cooked immediately afterwards.

Handwash station equipped with hot/cold running water, liquid soap and paper towels
QUATS sanitizer in red pail and fresh from dispenser measured 200ppm by end of inspection
3 compartment sink available for dish and ware washing
Pizza cutter stated to be cleaned and sanitized every 2 hours

Storage:
All food items stored at least 6" off the floor
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners stored separate from food preparation/storage areas;
recommended to further separate or install a divider between chemicals and take out boxes in back storage.
Tomato sauce for pizza (for use) stored at room temperature for 8 hours before discarding as per head office instructions. Products labelled.
