1) The butter portions are time stamped and discarded after 4 hours. The time stamp logs must be available for review at inspections.
2) The ambient temperature is 24C or less. If the ambient temperature is more than 24C, the butter portions must be discarded after 2 hours.
3) Your food safety plan is updated to reflect this change.
