Observation: The following tools require better cleaning:
1) Metal scoop stored in flour bin
2) Shelves in utensil/pot storage room
3) Tray in utensil/pot storage room
4) Cart in kitchen
Corrective Action(s): Ensure all the above tools are properly washed and cleaned. When food debris fall on the surface of clean tools, the tools MUST be rewashed as discussed at this time.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings observed on floor in the back storage room, storage area by the staff washroom, along the wall of the dishwashing area and furnace. Professional pest control company contracted.
Corrective Action(s): Remove all droppings and treat the areas using 1000ppm chlorine (1:50 bleach:water). Droppings must be monitored for and removed EVERY MORNING, not every week.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Food debris observed on floor behind chest freezer and underneath storage shelves in kitchen.
Corrective Action(s): Ensure to have all food debris removed from floor at the end of EACH day.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Major cleaning is required for the facility, especially the dishwashing area and the back storage area by the staff washroom.
Corrective Action(s): Ensure all food debris and build up of grease are removed from the following areas:
1) back storage room - reorganize as well
2) storage area by the staff washroom
3) floors of the dishwashing area
4) floors behind the chest freezer and storage shelves in kitchen

Comments

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating below required temperature of 4'C; Freezers operating at required temperature of -18'C.
- 200ppm chlorine solution available in a labelled spray bottle.
- Low temperature dishwasher achieved the minimum concentration of chlorine (50ppm) at the plate level after final rinse.
- Ventilation canopy hood serviced and maintained.
- General food storage practice in walk-in cooler/coolers satisfactory.
- Washroom satisfactory.

Facility has been coded for poor sanitation several times during the previous inspections. Correction Order issued for Code 301, 305 and 306. Improvement is required. As per progressive enforcement, failure to comply with this Order will result in issuance of violation ticket(s): one for EACH violation and one for not complying with this Order.
