Comments

- Premises and equipment maintained in sanitary condition. Ensure any spills near donut glazing area are cleaned rapidly to prevent attraction of pests.
- Handwashing stations in food preparation areas and in staff washroom were supplied with liquid soap and paper towel
- Public washrooms were maintained and supplied with liquid soap and air dryers for handwashing.
- All coolers were operating at acceptable temperatures (4C or colder)
- Walk-in cooler 4C
- Sandwich coolers 3C/4C
- Milk/cream dispenser 4C
- Beverage display cooler 4C
- Undercounter cooler (Ice cap area) 4C
- Undercounter cooler (Egg preparation area) 4C
- Walk-in freezer was -18C
- Hot holding temperatures of potentially hazardous foods was >60C.
- Hashbrowns 74C, Sausage 68C
- Soups 73-75C
- Ice machine (back) and ice bin (front service area) appeared clean/maintained
- Stirring spoons kept in ice water. Ice water appeared clear.
- High temperature dishwasher was operational and met required temperature to sanitize dishes. Final rinse temperature at dish surface measured 75.9C
- Quats sanitizer solution in 3 compartment sink and in pails with wiping cloths measured 200pm
- No signs of pest activity noted at time of the inspection. Pest control contract is in place.
