Observation (CORRECTED DURING INSPECTION): Manual warewashing at three compartment was not being done appropriately. Staff member was not able to demonstrate correct method to prepare sanitizer solution
Corrective Action(s): All dishes when washed using manual warewashing must be washed in first compartment with soap solution, rinsed in second compartment with water, and sanitized in third compartment by immersing in sanitizer solution for atleast 2 min and then air dried. Prepare sanitizer solution in third compartment by mixingone tablespoon bleach in one gallon of water (100ppm chlorine)

Comments

- Handwashing station in front area and in washroom were supplied with hot and cold running water, liquid soap and paper towel
- Walk-in cooler and pizza prep cooler are measured at less than 4C. Thermometers are available
- Upright storage freezer is measured at -18C
- Hot holding unit is measured at 45C at the time of inspection. According to operator, pizza slices are time tracked and discarded after one hour
- Food contact surface sanitizer is measured at 100ppm chlorine residual in spray bottle. NOTE: Ensure that fresh sanitizer solution is prepared on regular basis by mixing one teaspoon bleach in one litre water or one tablespoon bleach in one gallon of water (100ppm chlorine)
- Food storage practices are satisfactory
- No evidence of pest activity is noted
- General sanitation is satisfactory
