- Production of cookies, macarons, and marshmallows only
- General sanitation of facility is excellent
- Production equipment maintained in sanitary conditions
- Hand washing sink was free of obstructions and properly supplied with hot and cold running water, liquid soap, and paper towels
- Sanitizer solution available at 200 ppm (chlorine bleach) in spray bottle
- Three-compartment sink available for manual warewashing. Sinks were properly set up at time of inspection. *Mix 1 oz of bleach for every gallon of water for proper concentrations.
- Test strips available for monitoring sanitizer concentrations
- Walk-in cooler measured to be below 4C
- Walk-in freezer measured to be below -18C. Storing finished product only.
- Chest freezer measured to be below -18C.
- Dry storage room satisfactory; all food ingredients properly covered and stored off the ground.
- Accurate thermometers available. Temperature records well maintained and up to date.
- Pest management records and general maintenance logs well maintained as well. No signs of pest activity noted.
- Staff washroom and upstairs storage area satisfactory. Employees wear clean jackets and hair nets during production - good.
