205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Soaked noodles (20 degC), pizza (18 degC), meat sauce (48 degC) were stored at room temperature. Meat sauce was reheated then stove was turned off. Staff mentioned that the heat would be turned on again to reheat the sauce prior to service. Pizzas were from the cooler, but were being stored at room temperature then reheated on order prior to service.
Corrective Action(s): As discussed, these practices are unacceptable. Cooked sauce and pizzas are to be kept hot (above 60 degC) or cooled down and stored in the cooler at all times. They cannot be stored out at room temperature for an extended period of time. Discussed time stamps with staff for 2hr/4hr holding, but she preferred keeping the pizzas and the sauce in the cooler and reheating on order.

Discussed cloth used for covering dough in the cooler. The cloths are used for this purpose only and are laundered every 2nd day.
Pest control company is on contract.
