304 - Premises not free of pests [s. 26(a)]
Observation: Noticed mice droppings in several areas notably-underneath dry storage shelves, behind the dough mixeer, floor wall junctions along the prep coolers. Huge number of droppings noticed in the floor corner where staff belongings are stored.
Corrective Action(s): 1. Hire a licensed pest control company to initiate monitoring and control of mice. According to the food handler onsite, pest control technician has already been to this place.
2. Thorough and deep cleaning is required for floors in all areas of the restaurant especially behind and underneath ALL EQUIPMENT (all coolers, freezers, dough mixer, pizza oven, dishwasher, dry storage shelves) ( Sep. 26, 2021). Disinfect the floors using 1:50 bleach solution.
3. Place glue traps and/or metal traps to control mice.

Observation: A number of items found stored on or near the floor as well as build-up of flour noticed near and around dough mixer. Gaps noticed underneath the front door that may allow for entry of pests.
Corrective Action(s): 1. Ensure that all food items, equipment, take out boxes and other articles are store at least 6 inches off the floor to discourage mice harborage.
2. Ensure to identify any holes ( bigger than size of a quarte) in the walls and ceilings and patch/seal those to discourage mice harborage.
3. Ensure to clean floor and equipment thoroughly at closing to remove any (even minor) food debris and flour etc.
4. Move and clean underneath upright coolers every 2-3 days to remove food build up.
