209 - Food not protected from contamination [s. 12(a)] Observation (CORRECTED DURING INSPECTION): Sanitizer for food contact surfaces is prepared at a excessively high concentration. Test strip measured greater than 500 ppm. Dispenser jug of concentrated sanitizer was set to "bucket" instead of "spray bottle", resulting in a dosage that is 10 times greater than needed. Corrective Action(s): Dilute or prepare fresh sanitizer using the correct settings. Test sanitizer with test strips to ensure it is at 200 ppm. Violation Score: 9 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Grease and debris build up on hard to reach areas (underneath and behind equipment) as well as on shelving. Corrective Action(s): Clean all noted areas and ensure this is done regularly. Correct within 1 week. Violation Score: 3
