Observation (CORRECTED DURING INSPECTION): No paper towel available in dispenser. Staff member refilled paper towel in dispenser at time of inspection. Soap, hot and cold running water available.
Corrective Action(s): Ensure hand wash stations are fully equipped with soap, paper towel, hot and cold running water at all times. Highly suggest keeping an extra stock of soap and paper towel on site in kitchen so that the last user can easily refill the dispensers themselves.

Comments

- Premises is an approved kitchen that is used to prepare foods mostly for private events (ie. hot lunches) but sometimes for advanced food preparation for offsite temporary temporary events (ie. confederation park). Please ensure applicants take out temporary food permits for private events.
- Two door upright cooler 2C
- Two door upright freezer -10C (Ensure frozen potentially hazardous foods are stored at -18C or less)
- No food preparation or hot holding taking place at time of inspection
- General sanitation satisfactory
- No obvious signs of pest activity noted. Premises has contract with a professional pest control company. Follow all recommendations made by technician.
- Both bleach and quat available on site. Do not mix bleach/chlorine sanitizer and quat sanitizer.
- Spray bottles labelled as 'sanitizer' in the kitchen were 200ppm quat. Follow manufacture's instructions for use/diluting as needed. Obtain quat test strips to verify concentration of quat sanitizer solution.
- Chlorine sanitizer solution can be made by mixing 2ml to 5ml of bleach per liter of water in order to obtain 100ppm chlorine sanitizer. Obtain chlorine test strips to verify concentration of chlorine sanitizer solution.
- High temperature dishwasher achieved 71.7C (min/max probe thermometer)
