Observation: - Significant build up of food debris on the conveyor of the pizza oven.
Correction: - Clean the noted equipment. This is a repeat violation and failure to comply will lead to violation ticket.

Observation: Significant build up of grease and food debris on the conveyor of the pizza oven. This is a repeat violation.
Correction: Immediately clean the noted equipment. A pressure wash may be required to remove the caked on food debris.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: There is no hot/cold running water at the only main handwashing station in the kitchen. The staff stated that they use the handwashing station in the staff washroom.
Correction: Immediately make this handwashing station available and supplied with hot/cold running water, soap, and paper towels. You cannot operate with a handwashing station that is easily accessible by staff in the main kitchen.

Follow up inspection to report #DSOG-BDHUYA:

- Designated handwashing station supplied with hot/cold running water, soap, paper towels. Do not turn off the water supply; keep this station easily accessible by staff at all times.
- Surface sanitizer available in spray bottle at 100ppm chlorine concentration.
- The prepline pizza cooler was measured at 4C at the time of the inspection.
- You must continue to monitor the temperature of the cooler at all times and ensure the temperature maintains < or = 4C.
- All cold PHFs stored at 4C or less.
- Walk in cooler measured at 3C
- Sticky traps installed throughout the kitchen for pest control (ie fruit flies).
- Keep the back door closed at all times. Screen door can be left opened.
- Conveyor of the pizza oven has been cleaned. Continue to implement a regular cleaning schedule for clean in place equipment.
- General sanitation satisfactory.
