Observation (CORRECTED DURING INSPECTION): Large equipment where nuts were processed to make peanut butter were washed and sanitized at the end of the day, and a deep cleaning once a month.
Corrective Action(s): Equipment continuously used that cannot be put through the dishwasher must be cleaned and sanitized at least once every 4 hours. Ensure equipment is cleaned and sanitized with the appropriate sanitizer.
