Observation (CORRECTED DURING INSPECTION): Mouldy chicken and beef rolls were found in 4 carboard boxes in the cabiner under the hot holding roller unit. These boxes were labelled "keep frozen" and were stored in a cabit at room temperature.
Corrective Action(s): Operator discarded all 4 boxes of rotten food items at the time of inspection. Ensure food is stored in a safe manner and discarded timely.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Zep Supermarket Sanitizer is being used inside the facility. Staff was not following the directions provided on the chemical for adequate food safe sanitation. The counters were being sprayed with the sanitizer and wiped down with paper towels.
Corrective Action(s): Ensure the instructions on sanitizer handling are followed. Use soap and water to wipe down counters before sanitizing. Inspector to discuss sanitation procedures with 7-eleven headquarters.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The hand sink at the coffee counter and the slurpee counter was not equipped with soap and paper towels. The staff mentioned that these sinks are not used often.
Corrective Action(s): Ensure all handwashing sinks are stocked with hot and cold running water, liquid soap, and disposable paper towels to encourage frequent handwashing. Staff agreed to stock up the sinks.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) There was spilled milk noted in the walk-in cooler. Build up of food debris and sticky floors were noted.
2) The dry storage area has build up of food debris under storage racks. The area appears unorganized and full of clutter.
Corrective Action(s): The facility requires a deep clean. Thoroughly clean the facility, focusing primarily on areas behind equipment, under storage racks, and inside coolers. Date to be corrected by: May 12, 2022.

Observation: No staff on site has Food Safe level 1 or its equivalent. Internal 7-eleven food handling certificates are not equivalent to Food Safe level 1.
Corrective Action(s): Register for Food Safe level 1 or equivalent courses. Send a copy of the certificate to the inspector. List of approved courses provided to the assistant manager on site. Date to be corrected by: June 5, 2022

Comments

Temperatures:
Coolers were maintaining 4 degrees Celsius or less.
Freezers were maintaining less than -18 degrees Celsius.
The hot holding unit at the front was maintaining at least 60 degrees Celsius.
Cooler units have functional thermometers.

Sanitation:
Hand sink at the food preparation counter was stocked with hot and cold running water, liquid soap, and paper towels. *see violation above*
Staff hygiene and food handling practices appeared satisfactory.
NOTE: If gloves are to be used, ensure gloves are switched between tasks.
Sanitizer tested to be at 200 ppm QUATS. *inspector to verify the sanitizer with a consultant*

General:
Chemicals were stored in a safe manner under sinks and away from food items.
Washrooms were in satisfactory sanitary condition.
All lights were functional.

Pest Control:
Facility is monitored by a professional pest control company on a monthly basis. Past reports indicated similar concerns as noted by the inspector today, deep clean is required to maintain sanitation.

Report discussed with the person in charge and hard copy given on site.
