-Walk-in cooler was a 3C.
-Pizza prep cooler was at 4C (top) and 3C (bottom).
-Back kitchen prep cooler was at 4C (top and bottom).
-Front upright freezer was at -23C.
-Back chest freezer was at -18C.
-Sauces were probed at 4C or less. Sauces are cooled in shallow containers.
-Cooked chicken was probed at 3C in the walk-in cooler.
-Cleaning and sanitizing carried out in 3-compartment sink. Bleach solution prepared at 100ppm in the sink.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottles tested at 100ppm and properly labelled. Labels are beginning to fade and will need to be relabelled.
-Equipment clean and sanitary at the time of inspection.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered. Raw meats stored below and separately from ready-to-eat foods.
-Ingredient scoops stored in a sanitary manner.
-Door seals were clean and in good condition.
-General sanitation satisfactory at the time of inspection. Addition attention required under the onion storage area and under the shelving units in the walk-in cooler.
-Washroom clean and sanitary.
-No signs of pests noted at the time of inspection.
-Staff member on-site had valid FoodSafe Level 1.
