General Observations:
Upright "True" freezer temperature was -19 degC; Double door "True" cooler temperature was 4 degC; Single door "True" cooler temperature was 2 degC; bread freezer in dry storage closet was -18 degC.
Hand sink was fully equipped
200ppm quats was available for use (D-4055) in a spray bottle
Foods were not being hot held at the time of the inspection
Dishwasher rinse was 72 degC at the plate level
Agressive pest control company was on contract.
Chef has FS Level 1 certification
