No major sign of mice activity noticed. Clean floor behind the double stacked ovens to remove any old droppings. Dry storage areas appeared very clean and well lit. Pest control devices in use. * Ensure that all spray bottles/buckets of cleaners/sanitizing solutions are labeled accurately. * Supply liquid soap at the bar hand sink ( immediately). Walk-in cooler registered 4 C or below. Line coolers across from the grill ranged from 3-4 C Drawer coolers maintained below < 4 C. Hot holding of soups/gravies and soups> 60 C. Ice cream freezer and upright pastry cooler below -18 C. Salad preparation coolers maintained at 4 C or colder. Dishwasher final rinse: 50 ppm chlorine at the plate surface. D-10 sanitizer at the dispenser tested 200 ppm. Liquid soap and paper towels available at the kitchen hand sinks. General sanitation is satisfactory. Temperature logs are up to date.
