Observation: - Food debris noted on floor under 2 door reach in cooler and under back prep table. Food debris/grime noted at edges of floor.
Corrective Action(s): - Move all moveable equipment and thoroughly clean floor to remove all food debris and grime.

Observation: - Line cooler was operating at 9C
Corrective Action(s): - Repair or replace cooler so that it is able to maintain a temperature of 4C or colder. To be corrected by: 10-Apr-2022

Note: At time of the inspection, no food was being stored in lower portion of cooler and food items (cut vegetables, salsa) in inserts on top portion of cooler were being maintained at 4C or colder with ice under the inserts. This is only acceptable as an interim measure. Ensure ice is replenished frequently, limited quantities of food is present in inserts and temperatures of food is being monitored frequently to ensure temperature is maintained at 4C or colder.

Observation: 1) Portion of stainless steel finish on back counter has lifted and the surface is no longer continous or in good repair
2) Weather stripping at back is damaged
Corrective Action(s): 1) Repair counter surface so that surface is continuous, smooth, washable and in good repair.
2) Replace weather stripping to prevent pest entry.

- Coolers (with the exception of line cooler) were operating at 4C or colder:
- 2 door reach in cooler (right) 2C
- 2 door reach in cooler (left) 3C
- Countertop beverage cooler 4C
- Single door beverage cooler 4C
- Foods in inserts of line cooler were maintained at 4C or colder with ice (as interim measure)
- Potentially hazardous foods in steam table were maintained above 60C
- chicken 76C, rice 70C
- Food safe cooling methods being used at time of inspection - ice bath, portioned into smaller containers.
- Quats sanitizer solution present in 3 compartment sink and container with wiping cloth measured 200ppm
- No signs of pest infestation noted at time of the inspection. Pest control contract in place with monthly service. Viewed most recent report at time of the inspection.
- Foodsafe requirement met at time of the inspection. Copies of certificates kept on-site.
